Mexican Wedding Cookies by Chasmine



  • 1 cup butter, softened
  • ½ cup sugar
  • 2 cups flour
  • ½ tsp salt
  • 2 cups ground pecans
  • 2 tsp vanilla
  • Confectioners’ sugar


  • Beat 1 cup softened butter till creamy, add ½ cup sugar and beat
  • Add 2 cups flour, ½ tsp salt, 2 tsp vanilla, 2 cups pecans , and mix well.
  • Chill dough for 1 hour
  • Pre-heat over 325 degrees and bake for 12 minutes
  • Roll in confectioners’ sugar while still warm.

Cool, roll in confectioners’ sugar again.

Who were you inspired by to start baking?

Mom (our grandma), because when we were younger we used to make popcorn balls for Halloween together. I guess that’s where it all started.

Do you watch any baking shows? If yes, what shows and why do you enjoy watching them?

I watch Cupcake Wars , Cake Boss, and I like watching them because they give me new ideas on what to bake. 

What is your favorited baked good to make? & Why?   

My Chocolate Lovers Cupcake, because of the variety of chocolates between the layers of the cupcake. The bottom layer begins with an Oreo at the bottom, melted Hershey chocolate filled in the middle, scoop of vanilla ice cream with a harden chocolate shell on top.

Would you consider featuring more of your baking to the public and sharing your delicious creations with others?

I would love to, one day!
